Autumn Leaf Shortbread Cookies!

Who's ready for Autumn?! We are! We LOVE Summer but there's just something special about the Autumn time that gives us all the warm and fuzzies! Maybe it's because we need to start wearing those warm and fuzzy sweaters! :) And there's something extra special about having warm homemade cookies this time of year too! That is why I'm sharing with you this yummy Shortbread Cookie Recipe! Yum!


These do take some time to make so they are the perfect cookie to bake when the weather is chilly and you just want to be inside all day... and eat cookies! Oh and since these are shortbread they are on the dryer side so we recommend eating these with a cold glass of milk!

INGREDIENTS:

- 1/2 cup unsalted butter, room temperature
- 1/2 cup confectioner's sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- Green, red, orange and yellow food coloring (or whatever colors you have on hand)
- Roller
- Wax Paper
- Plastic Wrap

DIRECTIONS:

STEP 1: Beat the butter with an electric mixer until fluffy, then add the sugar and beat for 2 minutes. Add the vanilla and beat until combined. In a separate bowl, combine the flour and salt, then add this to the butter mixture.


STEP 2: Shape the batter into a ball, then divide into 4 pieces.


STEP 3: Now time to dye the pieces green, red, orange and yellow (Or whatever color you have on hand like us).


STEP 4: Get the roller out and flatten the dough into disks and stack them on top of each other. Then slice them in half and roll into 2 balls, making sure to mix the colors together.


STEP 5: Wrap the balls in plastic wrap and place in the fridge for 30 minutes to 1 hour.

STEP 6: Take dough out of fridge and unwrap plastic wrap. Roll the dough out on a floured surface until it is 1/4-inch thick.

STEP 7: Cut out leaf shapes and transfer to a baking sheet lined with plastic wrap.


STEP 8: Make indentations with a butter knife to create the veins of the leaves.


STEP 9: LAST STEP! Refrigerate for 30 minutes until firm, then bake at 325F for 15 minutes. Cool completely and enjoy!

The littles devoured these in no time at all but I was able to have a few crumbs so we're all good (Que eye roll!) Hope your family loves them as much as we did!
