I love snickerdoodles! That yummy, soft doughy cookie covered in sugar and cinnamon.. who wouldn't love them!
My boys love them too and love making them with me. So if your'e looking for a pretty quick and easy cookie recipe you can make with your kids- this is it! Recipe found in the Lion House cookbook.
INGREDIENTS:
- 3 cup granulated sugar, divided
- 1 1/4 teaspoons ground cinnamon
- 1 cup butter, softened
- 4 eggs
- 1 teaspoon vanilla
- 2 1/2 tablespoons water
- 6 cups all purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
STEP 1: Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
STEP 2: Mix 1/2 cup of the sugar with cinnamon in a medium bowl and set aside.
STEP 3: Combine butter and remaining 2 1/2 cups of sugar in a large mixing bowl and cream together until light and fluffy.
STEP 4: Add eggs, vanilla and water and beat until fluffy.
STEP 5: Add flour, cream of tartar, baking soda and salt, pulsing mixer at low speed until flour is nearly blended in. Continue mixing at medium speed until well mixed.
STEP 6: Shape dough by rounded tablespoons. Roll dough in cinnamon-sugar mixture. (My boys LOVED this part and made sure each cookie had as much cinnamon sugar as possible!)
My kids always love to shape some of the dough into their own little creations! It usually ends up being a snowman or cookie man :)
STEP 7: Bake 9 to 10 minutes of until golden brown.
I think this one ended up looking like Baymax from Big Hero 6!
And that's it! So yummy! Make sure to keep an eye on your kids or they'll eat them all up before you know it!
